Roquefort PDO

The king of all blue cheeses

A perfect addition to all cheeseboards, salads or sauces, this emblematic blue cheese is made from ewe’s milk in the heart of a rocky scree. The cool and air and humidity coming from deep within the mountain circulates using crevices called ‘Fleurines’, thus creating unique biological conditions.

Its unique and intense taste can be enjoyed everywhere, and always, from a cheeseboard to pasta or even in a quiche. Best alongside a red Châteauneuf-du-Pape or a Sauternes. Other perfect pairings include natural and sweet wine like a Muscat or Jurancon.

Made exclusively from Lacaune ewe’s milk

Roquefort owes its reputation to the amazing quality of its raw PDO ewe’s milk which is key to obtain the incomparable taste we all know and love.  It’s colour also varies depending on the strain of Penicillium’ Roqueforti’ used.

After a remarkably long ripening period in natural cellars, wrapped in foil, our Roquefort finally reaches peak maturation which guarantees the creaminess and an exceptional aroma.
