Exquisite in black and gold

Easily recognisable, Tomme des Pyrénées and the stronger flavoured Tomme Dorée can have a black or gold rind. In olden days it was made in farms at high altitude during summer grazing. It is today protected by a protected geographical designation which guarantees its quality and origin.

The milk for this cheese is collected exclusively in a protected area. It all starts with milk curdling after renneting. Once the curdled milk achieves the ideal texture, it is cut, stirred and molded. Finally, the cheese is removed from its mold and salted, ripening can now start.

The main difference between Tomme Noire and Dorée, resides in the flavour. Tomme Noire is mild and fresh cheese, whereas Tomme Dorée is ripened longer, resulting in a full bodied flavour.
