Strawberry and Matcha Cloud Cake

This light-as-a-cloud summer cake is another delectable creation from Chef Stefan Rose. The natural sweet and tart flavour of strawberries pairs beautifully with matcha. Our Candia Professional UHT Whipping Cream gives it a perfectly balanced fresh flavour.

Step 1 - Steam strawberries with sugar and hibiscus to make consommé

  • 2kg Strawberries (frozen or fresh)
  • 80g Hibiscus
  • 200g water
  • 250g caster sugar

Mix all together and steam over bain marie for 3-4 hours. Strain. Leave remaining strawberries straining for 2 hours in fridge to catch all juices.

Step 2 - Create Matcha Light Sponge & Cut into squares

  • 250g egg yolks
  • 125g caster sugar (1)
  • 125g caster sugar (2)
  • 320g egg whites
  • 125g plain flour
  • 100g cornflour
  • 30g matcha green tea powder

Sieve flour and cornflour & matcha green tea. Whisk the yolks with sugar (1) to sabayon

Whisk whites with sugar (2) to medium stiff peaks

Fold 1/3rd whites into the yolks in a large mixing bowl

Fold the flour into the yolks in 2 additions, then gently add the remaining whites.

Pipe onto nonstick baking mat with large plain piping nozzle. Dust liberally with icing sugar.

Bake at 170C for 13-14 mins or until golden brown on top and cooked through.

Remove from the baking parchment and spike all over with a fork or toothpicks, ready to soak.

Step 3 - Make the mascarpone espuma

  • 250g Mascarpone
  • 125g Candia UHT whipping cream
  • 220g whole milk
  • 40g sugar
  • 20g SOSA Pro Espuma Cold

Blend all ingredients together until smooth. Pass through a fine sieve. Charge Twice in iSi gun with cream whipper charges.

Step 4 - Create Matcha ‘Tres Leches’ Soaking Syrup

  • 400g evaporated milk
  • 150g condensed milk
  • 350g Candia Professional UHT Whipping Cream
  • 200g whole milk
  • 1g fine salt
  • 15g matcha Powder

Boil milk, salt, and whisk in matcha. Blend in jug, then blend in remaining ingredients.

Step 5 - Turn half of consommé into a fluid gel

  • 600g consommé
  • 12g SOSA gracila gel (or replace with 6g agar agar)

Bring consommé to the boil with the Gracila Gel. Chill until set as a jelly, then blend until smooth.

Step 6 - Lightly thicken other half of consommé to create a sauce

Step 7 - Dice & Half Strawberries, mix some fluid gel in with the diced strawberries

Step 8 - Add sponge to greased metal square mould and soak generously with matcha soaking syrup

Step 9 - Create Strawberry Pouring Sauce

  • 750g consommé
  • 0.4g xanthan
  • 3g ultratex

Slowly whisk together the dry ingredients into the consommé to lightly thicken, leave for 5 minutes to hydrate.

Step 10 - Assemble the cakes and serve!

Add halved strawberries, facing outwards, Add some diced strawberries, add the espuma to fill the mould. Level with hot palette knife. Then dust the top with matcha green tea powder. Remove the metal ring by heating with a blowtorch. Serve the sauce at the tableside.
