Not All Cheese Melts the Same - Here’s How the French Get It Right

The process of watching and smelling while French cheese melts is only bettered by eating it afterwards. Gorging on the gooey loveliness of a freshly melted cheese ensures you enjoy the full extremities of the taste possibilities, as heat breaks down the texture into a flood of velvety smoothness and unleashes stronger taste and aroma. How does cheese melt?

There are a number of factors that combine to make cheese melt, but how you control these factors will define how smooth and velvety the resulting mixture will be.   • Fat – Cheeses with a higher fat content combined with a higher water content will melt better and more smoothly. This is because the fat can flow easier as the proteins soften and stretch thanks to the moisture content.
  • Acidity – The balance of acid in a cheese has to be absolutely spot on, and hitting the middle sweet spot is how you make cheese melt properly. A cheese with high acid content will be too hard to melt, but it’s important to note that doesn’t make it a bad cheese. Too little acid and the cheese can split when heat is applied. But a medium acid content will help the melting process.
  • Protein – Protein is the key ingredient that keeps the structure of cheese together, and when cheese is heated, these protein bonds start to break down and the structure of the cheese will sag and stretch, creating the soft stringiness we associate with good melting cheese.
  • Moisture – Cheese dries as it ages and the protein structures also loosen, which starts to affect how it melts. So younger cheese essentially melts better because it has more moisture and the protein structure is tighter. Moisture gets lost as the cheese ages and this can lead to the cheese separating when it is heated, rather than melting smoothly.

So the combination of high protein, medium acid content, protein structure and high moisture content in a cheese is the best way to produce a good melting cheese. On the other hand, cheeses from other producing regions around the world could be very nice tasting cheeses, but they won’t have the same melting properties. They could be low moisture hard cheeses, they could be specially aged cheeses or they could be processed cheeses. All these types of cheese can be delicious and very popular but these factors will combine to mean they won’t be good melting cheeses.
