One of the many great benefits of French cheese is that it can be enjoyed all year round. Most French cheeses avoid being seasonal and deliver a consistency of flavour and aroma whenever you choose to enjoy them, but how you enjoy them can change with the seasons. While you might make a gooey fondue or melt some Raclette as a delicious winter warmer over December, January and February, you can use a variety of the best French cheeses in a completely different way in the summer.

Baked Sweet Potatoes and Roquefort Salad

There were a thousand different summer salads we could have opted for here, but we’ve gone for this Roquefort salad because it so perfectly combines ingredients for a distinctive blue cheese that isn’t easy to pair with, and because it is dead easy for a lazy summer’s day. This recipe uses baked sweet potatoes drizzled in honey and olive oil and also uses a dressing that combines honey, vinegar and mustard. The resulting salad also uses avocado, which pairs beautifully with the sharp and intense flavour of the Roquefort cheese.

Ossau Iraty Summer Salad Jar

Cold pasta can be a delight on a summer’s day and the colours of this simple dish deliver a fresh and vibrant appeal. Add layers of cooked pasta to a jar with fresh basil, fresh tomatoes and a good quality tomato sauce. Plenty of seasoning and cubes of Ossau Iraty, a melt in the mouth ewe’s milk cheese, make this a delicious dish to spoon away at in the garden on a warm day.

Bethmale, Courgettes and Coppa Ham Pasta

This is a quick and simple one-pot dish that is ideal for summer evenings when you need something light. The pasta is cooked like risotto rice in vegetable stock and white wine, and the combination with Bethmale and a slice of coppa ham makes this a delicious mix of complex flavours which is incredibly easy to make.

Chioggia Beetroot and Cantal Slices Carpaccio

Here we have an explosion of summer colours in a quick and light dish that is moreish on a hot day. Alternate slices of the radiant Chioggia beetroot and the Cantal cheese in a circle on a plate, and drizzle with a dressing made with olive oil, vinegar and mustard. The taste is a wonderful mix of sweetness and sharpness, and while it seems a shame to ruin the aesthetics of the presentation by digging in, you’ll be very glad you did.

Mont Brie Bleu Phyllo

Nothing says ‘summer’ more than strawberries and this delicious combination of sweet and savoury will bring a whole new dimension to how you enjoy them. This is a dish that starts with making a strawberry compote, including peaches, fresh thyme, lemon juice and fennel seeds. This is poured into a fresh phyllo, which is made by wrapping the dough around a layer of creamy and indulgent Mont Brie Bleu. Trust us, the end result will make your summer.

Strawberry and Matcha Cloud Cake

We couldn’t do a summer recipes feature without using strawberries for a totally sweet treat. This delicate Matcha sponge is made using Sodiaal whipping cream, butter and milk and is filled with a mascarpone espuma and sits on a bed of strawberries and a strawberry sauce. It is light, colourful, fresh and stunningly indulgent, everything that a great summer should be.
