Raclette Cookies

Savoury cookies are a shift in convention that is often underestimated, and these square-shaped fancies use finely diced Raclette mixed with fennel seeds to create a golden and crisp cookie that melts in the mouth. And that’s not just the famously gooey Raclette. These easy-to-make cookies are an absolute treat at any time, but act as a lovely entrée for any great meal.

 

Smoked Salmon & Munster Tartine

This tartine is a great example of how French cheese can combine with some unlikely flavours to produce a dish with creativity at its core. Munster is melted together with 18% fat professional cooking cream to form a deliciously smooth blend, which is then cooled in the fridge. The Munster cream is then spread on a slice of crusty bread and combined with onion and dill seeds under a grill to produce a taste sensation with every bite.

 

Mont Brie Bleu & Gruyere Croquettes

Here is a dish where a chef can showcase their skills and combine these with good quality ingredients. A French chef can call on premium milk and butter as well as premium French cheese, and they will need all this to make these deliciously indulgent croquettes. Mont Brie Bleu and Gruyere are grated together into a bechamel sauce, which, after cooling is shaped into balls and then coated in a breadcrumb mixture. The golden brown croquettes which result after deep frying in oil should deliver all the crunch, gooeyness and taste you expect.

 

Butternut Velouté Topped With Brie De Meaux Cream

This velouté is a technical challenge for any good chef, but the result is a delightful dish packed full of flavour. There are four stages to the production; a butternut squash velouté, pickled onions, croutons and finally the Brie De Meaux cream. The cheese is cut into chunks and melted into a mouthwatering cream, and it is hard not to be lavish when you spoon this over for the colourful finish.

 

Comte Pesto & Emmental Cheese Twist

Once again we can demonstrate the sheer versatility of French cheese and that some of the best elements of French cuisine are fundamentally rooted in the art of baking. Here we have grated Comte mixed in with the pesto and grated Emmental added to the puff pastry layers of the twists. The end result is packed with flavour and is an unexpected twist in every sense.
